Among the popular favorites of homemade salsa is, of course, the famous green sauce recipe, and for obvios reasons: simple and fast to prepare, delicious to enjoy.

There is also the added benefit that the green sauce recipe, like practically every other Mexican salsa recipe, possesses: once you understand and follow the easy basic instructions, then you can proceed if you choose, to add a little innovation or creativity of your own.

For instance, chopped onions, garlic or avocado are inminently adaptable to the green sauce recipe. The one and only irreplaceable item is, of course, the green tomatoe or tomatillo.

So the sky is the limit when it comes to creating your own special version of green salsa recipe.

Makes about 1 cup 1/2

Ingredients

  • 4 or 5 small green tomatoes (tomatillos), husked and rinsed
  • 1 cup water
  • 2 fresh medium size jalapeno peppers or 4 serrano peppers, stemmed
  • 1/2 cup of fresh cilantro roughly chopped
  • 1 to 2 tablespoons finely chopped white union (optional)
  • Salt and pepper added to taste.

Procedure

  1. Boil the peppers and tomatillos in water until soft.
  2. Cut the softened peppers in half in order to remove the veins and seeds from the interior.
  3. Blend to a coarse puree the peppers, tomatillos and cilantro. There should be about 1 1/2 cups puree.
  4. Scrape the mixture into a serving bowl.
  5. Rinse the onion under cold water, then shake to remove escess moisture and stir into the salsa. (optional)
  6. Season with salt added to taste.
  7. Serve as a condiment for scramble eggs, tacos, grilled meats, chicken...whatever you wish.
