Ingredients
  • 1 lbs ground beef
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper, freshly ground
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tablespoon taco seasoning
  • 2 tablespoon tomato paste
  • 8 oz. can black beans, rinsed and drained
  • 2 avocados, diced
  • 4 tablespoons fresh cilantro, chopped
  • 4 tablespoons canola oil, for cooking
  • 4 large tortillas
  • 8 oz. white Cheddar, shredded
  • 1 lemon, cut into wedges
  • Your favorite sour cream, for serving
Instructions
  1. In a pan, add 2 tablespoons oil. Add beef, breaking up with a wooden spoon, season with salt and pepper, sauté with garlic and onion until softened about 3 to 4 minutes on medium heat.
  2. Add taco seasoning, tomato paste, 1 tbsp water and black beans; cook on medium-low for 5 minutes. Turn off heat and mix in avocado and cilantro.
  3. Preheat another a large non-stick pan over medium heat with 2 teaspoon oil. Place a tortilla in the pan and sprinkle half with cheese, beef mixture. Fold tortilla over and fry lightly on both sides until cheese is melted. Repeat with remaining tortillas.
  4. Cut quesadillas half and serve with lime wedges and sour cream. Enjoy!

  • ½ tablespoon butter
  • ½ medium onion, chopped
  • 1 can (15 oz.) black beans
  • ½ teaspoon red chile, powder
  • Salt to taste
  • 1 cup Mexican cheese blend
  • 1 cup Enchilada sauce
  • 2 tortillas
For the rice:
  • ¾ cup rice, raw
  • 2 cup cold water
  • 1 medium green chile or Serrano pepper, chopped
  • 2 tablespoon cilantro leaves, chopped
  • 1 tablespoon butter
  • 2 teaspoon lime juice
Instructions
  1. In a pan, add butter or oil. Add rice and saute until gold color, about 3 to 4 minutes on medium heat.
  2. Add the green chillis, cilantro and mix well. Add the water and cook the rice around 5-10 minutes. When rice is ready add in the lemon juice and mix.
  3. Meanwhile, heat ½ tbsp of butter in small frying pan. Add onion, pinch of salt and saute till it becomes translucent. Add in the black beans and red chilli powder, drizzle 2 tablespoons water and saute it for 2 to 3 minutes.
  4. Preheat the oven to 350 F and then put it on broil mode.
  5. Place two tortillas in two separate cooking pans.
  6. Add in the rice prepared at the center followed by the black beans mixture. Now pour the sauce, Mexican cheese blend. Roll it up and place it fold side down.
  7. Pour the remaining enchilada sauce on top of the tortillas. Sprinkle the remaining cheese.
  8. Broil in the oven for about 3 to 5 minutes or until the cheese melts and sauce bubbles.
  9. Remove the burritos from the oven, add lettuce, guacamole if desired.Enchilada Style Burrito is now ready.

  • ½ cup flour
  • 1 ½ tablespoons ground cinnamon
  • ½ teaspoons chili powder
  • 10 tablespoons unsalted butter
  • 1 ¼ cups sugar
  • 1 cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 2 large eggs
For frosting:
  • 3 cups powdered sugar
  • 16 tablespoons unsalted butter, room temperature
  • pinch of salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon heavy cream or milk
  • 1 ½ tablespoons ground cinnamon
Instructions
  1. Preheat the oven to 325 -350 F degrees.
  2. Prepare baking pan with parchment paper or oil. Set aside.
  3. Whisk together flour, cinnamon and ground red pepper in a bowl.
  4. Place the butter, sugar, cocoa, and salt in a large microwavable bowl. Heat in 45-second increments over medium-high heat, stirring after each increment, until butter is fully melted, allow to cool slightly.
  5. Stir in vanilla extract and eggs, one at a time, until batter is thick and shiny.
  6. Add flour mixture, stir until just mixed then beat vigorously by hand for another 30 seconds.
  7. Pour batter into prepared pan and bake for 27-32 minutes or until the toothpick inserted in center of brownies have just a few crumbs sticking to it.
  8. Cool brownies in pan for 15 minutes and then lift parchment sides and place brownies on a cooling rack to cool completely before frosting.
  9. Beat together powdered sugar and butter in a medium bowl for 2-3 minutes. Add salt, vanilla, cream, and cinnamon and continue to mix until frosting is thick and smooth. Add the frosting to your brownies once they have cooled

Horchata is a sweet drink of different variations throughout the world using Ground Almond seeds, Sesame Seeds. Tigernuts or Chufas, Melon seeds, Rice, and Barley. Its name came from the Valencian word “orxata” which they say might have come from the word ordiata or ordi which translates to barley while Italians and both French and English also have their versions which spell orzata and orgeat although barley is not the main ingredient of horchata these days. This Horchata Recipe is the Mexican version which is made from rice.

The Horchata Recipe is almost identical in Mexico and Guatemala which most often times make use of rice and Vanilla and Cinnamon which is always present and no Cinco de Mayo is complete without this sweet and refreshing drink.   • 1 cup of white rice
  • ⅔ cup sugar
  • ½ cup chopped almonds
  • 1½ teaspoon ground cinnamon or 1 cinnamon stick
  • 1 teaspoon vanilla
  • 12 ounces evaporated milk
  • 1½ cup almond milk or milk
  • 7 cups cold water
  • Ice for serving
Instructions
  1. Wash and soak the rice.
  2. Add cinnamon, and almonds in a bowl of water and keep in the fridge per night, or at least for 5 hours ( that the rice would be soft and slight ).
  3. Strain the water from the cinnamon, rice, and almond mixture that were soaking, disposing of water.
  4. Blend together the cinnamon, rice, and almond mixture with evaporated milk until a smoother mix is formed and the grains of rice are completely ground.
  5. Strain the resulting liquid into a pitcher, and add the sugar, vanilla, and milk. Mix well until everything is well combined.
  6. Add a liter of water, and serve with ice.

  • ¼ cup unsalted butter
  • ½ Spanish onion
  • ½ cup all-purpose flour
  • 2½cup whole milk
  • 8 ounces chicken breast, boiled, cutted
  • 1 teaspoon salt
  • ⅓ teaspoon nutmeg
  • 2 large eggs
  • 1 cup breadcrumbs
  • Oil for frying
Instructions
  1. Heat the butter in a medium pan over medium-high heat. Cook the onions until they become golden, about 5 minutes. Add flour, mix well and continue cook for 5 minutes until the flour is cooked through and golden brown. Pour the milk into the flour mixture and cook, stirring continuously, for about 2 minutes, until you have a thick béchamel sauce.
  2. Add the chicken, and sprinkle with salt and the nutmeg, and cook for another 2 minutes. You should now have a thick mixture that you can mold in your hands. Spread the mixture on a cookie sheet to cool for 1-2 hours in the fridge.
  3. Take a spoon of the mixture and roll in your hands to make a small cylinder. Roll the cylinder in breadcrumbs, then in the eggs, and then again in the breadcrumbs and set aside on the plate. Repeat with the remaining mixture until you have about 36 croquetas.
  4. In a small deep frying pan, heat the frying oil to 375 degrees. Working in small batches, add the croquetas, making sure they are covered completely in oil. Fry until golden, about 1 minute, then transfer to a paper towel-lined tray to let drain. Season with salt and serve hot.

  • 2 lbs skirt steak
  • 3 cloves garlic, minced
  • 1 teaspoons cumin powder
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • ½ teaspoon granulated onion
  • 1 large onion, sliced
  • 3 tablespoons olive oil
  • ½ cup water
  • 8 corn tortillas
  • 1 cup cuacamole
  • 1 cup tomatos
  • ⅓ cup sliced jalapeno
  • 1 cup red onion,slicer
  • 1 cup cilantro leaves
  • 2 cups green leaf lettuce
Instructions
  1. Mix the minced garlic, cumin, salt, oregano, pepper, granulated onion in a small bowl, add the skirt steak and shake to combine.
  2. Refrigerate for minimum 8 hours (better overnight).
  3. Please sliced onion in the bottom of the slow cooker.
  4. Transfer the flank steak on top of onion.
  5. Add in the top 3 tablespoons of olive oil and ½ cup of water.
  6. Cook over low heat for 6-9 hours.
  7. Serve with Guacamole, tomatoes, red onion, jalapeno, cilantro and green leaf in Corn Tortillas.

  • 1 lbs beef, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced

2 tablespoon fajita seasoning:
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

  • ½ teaspoon sweet paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
For serving:
  • 8 corn tortillas
  • 2 cups green leaf lettuce
Instructions
  1. Prepare Fajita seasoning, in a small bowl mix all fajita ingredients together – cumin, chili powder, salt, black pepper, oregano, sweet paprika, onion, and garlic.
  2. In the slow cooker put salsa sauce, beef, pepper, onion, on the top puy fajita and mix all well.
  3. Cook on the LOW temperature around 6 hours, on high around 4 hours.
  4. Serve with green leaf lettuce in the corn tortillas.

  • ¼ cup olive oil
  • ¼ cup orange juice
  • ⅛ cup Worcestire sauce
  • ⅛ cup Soy Sauce
  • ¼ cup cilantro leaves, chopped
