Serves: 1½ Cups
- 4 or 5 small green tomatoes (tomatillos), husked and rinsed
- 1 cup water
- 2 fresh medium size jalapeno peppers or 4 serrano peppers, stemmed
- ½ cup of fresh cilantro roughly chopped
- 1 to 2 tablespoons finely chopped white onion (optional)
- Salt and pepper added to taste.
- Boil the peppers and tomatillos in water until soft.
- Cut the softened peppers in half in order to remove the veins and seeds from the interior.
- Blend to a coarse puree the peppers, tomatillos, and cilantro. There should be about 1½ cups puree.
- Scrape the mixture into a serving bowl.
- Rinse the onion under cold water, then shake to remove excess moisture and stir into the salsa. (optional)
- Season with salt added to taste.
- Serve as a condiment for scrambled eggs, tacos, grilled meats, chicken...whatever you wish.
