Green Sauce Recipe

Ingredients
  • 4 or 5 small green tomatoes (tomatillos), husked and rinsed
  • 1 cup water
  • 2 fresh medium size jalapeno peppers or 4 serrano peppers, stemmed
  • ½ cup of fresh cilantro roughly chopped
  • 1 to 2 tablespoons finely chopped white onion (optional)
  • Salt and pepper added to taste.
Instructions
  1. Boil the peppers and tomatillos in water until soft.
  2. Cut the softened peppers in half in order to remove the veins and seeds from the interior.
  3. Blend to a coarse puree the peppers, tomatillos, and cilantro. There should be about 1½ cups puree.
  4. Scrape the mixture into a serving bowl.
  5. Rinse the onion under cold water, then shake to remove excess moisture and stir into the salsa. (optional)
  6. Season with salt added to taste.
  7. Serve as a condiment for scrambled eggs, tacos, grilled meats, chicken...whatever you wish.
