Place the 1 tablespoon of olive oil in heated heavy duty pan.
Cook chicken breasts in pan 7 minutes per each side.
Place the cooked chicken breasts aside to rest.
In the same pan add 1 tablespoon olive oil and cook on medium heat diced onion, garlic, and bell peppers.
After 5 minutes when the onion is caramelized add diced tomatoes and 3 tablespoons fajita seasoning. Stir well and cook for 5 minutes.
For the Chicken
Dice the cooked chicken breasts and add to pan with vegetables.
Stir until the mixture is fully combined.
Cut the avocado and mozzarella on slices.
Add 1 teaspoon of olive oil in hot pan and place 2 tortillas.
Spread 1 teaspoon sour cream on half of each tortilla, place over sliced mozzarella and avocado, chicken mixture and sprinkle with few drops of lime juice and minced cilantro.
Fold the tortillas over the filling.
Cook the tortillas 2 minutes per
each side or until the mozzarella melted.
Repeat for rest 4 tortillas.
Cut the tortillas in 4 pieces and serve with guacamole.
