Elote Recipe (Mexican Sweet Corn)

Ingredients
  • 3 pcs. Fresh Sweet Corn
  • 3 Tablespoons Mayonnaise
  • ½ Teaspoon Garlic Powder
  • ½ Cup Cotija Cheese, Crumbled
  • 3 Tablespoons Fresh Cilantro, Roughly Chopped
  • ½ Teaspoon Chipotle Chili Powder
  • 2 Limes, Quartered
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place corn on the oven rack.
  3. Bake for 35-40 minutes or until fork tender.
  4. In a small bowl combine garlic powder and mayonnaise.
  5. Brush the Corn with Mayo when done, Roll in cotija cheese.
  6. Sprinkle with cilantro and chili powder.
  7. Squeeze with fresh lime juice.
  8. Serve
