Grilled Chicken Mole Recipe

Ingredients
For the Mole Sauce
  • 1 Large Roma Tomato, chopped
  • ½ White Onion, chopped
  • 1 clove Garlic, mashed
  • 1 Serrano Pepper, sliced
  • 1 tbsp. Sesame Seeds, toasted
  • 2 cups Chicken Broth
  • Salt
  • Pepper
  • 2 tbsp. Canola Oil
  • 4 oz. Dark Mole Paste
For the Chicken
  • 1 lb. Boneless Chicken Breast
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • ½ tsp. Garlic Powder
  • ½ tsp. Cumin Powder
  • ¼ tsp. Red Pepper Flakes
  • 1 tbsp. Lime Juice
Instructions
  1. Blend tomatoes, onion, garlic, serranos, sesame seeds, and a cup chicken broth until smooth. Season with salt and pepper.
  2. Heat oil in a skillet. Pour in the sauce and simmer for 5 minutes.
  3. Add the mole paste and remaining chicken broth. Cook for 25 minutes.
  4. Combine salt, pepper, garlic powder, cumin, and chili flakes in a bowl.
  5. Season chicken with seasoning blend.
  6. Cook the chicken on the grill for 4-5 minutes per side.
  7. Serve chicken topped with mole sauce and sesame seeds.
