Chorizo Breakfast Burritos Recipe

- ¼ Onion, chopped
- 1 Jalapeño Pepper, chopped
- 4 Eggs, beaten
- 2 Flour Tortillas
- ½ cup Monterey Jack Cheese
- ¼ lb Chorizo
- For the Potatoes
- 1 small Potato, diced
- ½ tsp. Chili Powder
- Salt
- Black Pepper
- Olive Oil
- 2 Tomatillos, husked
- 1 clove Garlic
- 1 Chipotle in Adobo stemmed
- Toss the potato in olive oil, salt, pepper, and chili powder.
- Bake for 20 minutes at 400F.
- Roast the tomatillos for 10-15 minutes at 400F.
- Blend roasted tomatillos, chipotle, and garlic.
- Sautee chorizo for 3-5 minutes per side in a skillet. Set aside.
- In the same skillet, saute onions and jalapeños. Whisk in the eggs.
- Heat up a tortilla for 30-60 seconds in a skillet.
- Stuff with potatoes, eggs, and chorizo.
- Roll tight and toast in a skillet until edges are crisp.
