Chorizo Breakfast Burritos Recipe

Ingredients
For the Filling
  • ¼ Onion, chopped
  • 1 Jalapeño Pepper, chopped
  • 4 Eggs, beaten
  • 2 Flour Tortillas
  • ½ cup Monterey Jack Cheese
  • ¼ lb Chorizo
  • For the Potatoes
  • 1 small Potato, diced
  • ½ tsp. Chili Powder
  • Salt
  • Black Pepper
  • Olive Oil
For the Tomatillo-Chipotle Salsa
  • 2 Tomatillos, husked
  • 1 clove Garlic
  • 1 Chipotle in Adobo stemmed
Instructions
  1. Toss the potato in olive oil, salt, pepper, and chili powder.
  2. Bake for 20 minutes at 400F.
  3. Roast the tomatillos for 10-15 minutes at 400F.
  4. Blend roasted tomatillos, chipotle, and garlic.
  5. Sautee chorizo for 3-5 minutes per side in a skillet. Set aside.
  6. In the same skillet, saute onions and jalapeños. Whisk in the eggs.
  7. Heat up a tortilla for 30-60 seconds in a skillet.
  8. Stuff with potatoes, eggs, and chorizo.
  9. Roll tight and toast in a skillet until edges are crisp.
