Baja Fried Shrimp Tacos

Ingredients
  • ¼ cup Mayonnaise
  • 1 Chipotle in Adobo stemmed
  • ¼ cup Buttermilk
  • Salt
  • Pepper
  • 1 tbsp. Butter
  • 1.5 cups shredded Green Cabbage
  • 1 Carrot, shredded
  • Vegetable Oil, for frying
  • 12 pcs. Shrimp, shelled and deveined
  • 1 cup Panko
  • 6 Corn Tortillas
  • 2 Pickled Jalapeños, thinly sliced
  • ½ Red Onion, thinly sliced
  • ¼ cup Chopped Cilantro
  • ¼ cup Crumbled Feta
  • Lime for Serving
Instructions
  1. Blend the mayonnaise, chipotle, and 1 tablespoon of buttermilk in a food processor. Season with salt and pepper.
  2. Sautee cabbage and carrots in butter. Season with salt and pepper.
  3. Dip the shrimp in buttermilk then coat in panko.
  4. Deep fry the shrimp for 2 minutes. Drain on paper towels.
  5. Assemble the tortillas. Spoon some of the cabbage and carrot mixes into the center of each tortilla and top with 2 pieces fried shrimp.
  6. Top with chipotle mayo, jalapeños, red onions, cilantro, and feta.
