Mexican Lasagna Recipe

- Olive oil
- ½ lb ground beef
- ½ Tsp. salt
- ½ Tbsp. chili powder
- ½ Tbsp. ground cumin
- ½ Tbsp. ground coriander
- ¼ Tsp. cayenne
- 7 oz can refried beans
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 garlic clove, minced
- 14 oz can diced tomatoes
- 4 oz can dice green Anaheim chilis
- ¼ Tsp. dried oregano
- 3 10” flour tortillas
- 1 cup Monterey Jack cheese, grated
- 1 cup Cheddar cheese, grated
- Brown the ground beef.
- Sprinkle in salt, chili powder, cayenne, cumin, and coriander.
- Remove the beef from the pan and set aside.
- In the same pan, saute onions, bell peppers, garlic, tomatoes, chili, and oregano.
- Preheat oven to 350F. Oil a 10” deep round baking pan.
- Layer the tortillas, beans, meat, cheese, and sauce.
- Bake for 35 minutes.
