Ingredients
  • ½ lb ground beef
  • 1 medium russet potato, peeled and diced to ½” cubes
  • ¼ cup diced yellow onion
  • ¼ cup diced bell pepper
  • 1 tbsp. canola oil
  • ½ tsp. salt
  • 3 cloves garlic
  • ¼ tsp. pepper
  • ½ tsp. ground cumin
  • ½ cup beef stock
  • ¼ cup cilantro
  • 1 tomato, cored and diced
Instructions
  1. Brown the beef in canola oil.
  2. Add onions, bell pepper, tomatoes, garlic, and all spices. Cook for 10 minutes.
  3. Add potatoes and cilantro.
  4. Add stock and simmer for 25 minutes.
  5. Serve
