Mexican Beef Empanada Recipe

For the Pastry
  • 5 grams Yeast
  • Pinch of Salt
  • 100 grams Butter
  • 30 ml Warm Milk
  • 150 grams Flour
  • 1 Egg Yolk
  • Pinch of Sugar
For the Filling
  • 1 clove Garlic
  • 1 Jalapeno, chopped
  • Salt, to taste
  • 2 Tbsp. Creme Fraiche
  • 1 Tbsp. Chopped Parsley
  • Pepper, to taste
  • 1 small White Onion, diced
  • 1 small Bell Pepper, diced
  • 200 grams Ground Beef
  • 1 Egg
  • 1 tbsp. Tomato Paste
  • ΒΌ tsp. Chili Powder
  1. Mix milk, sugar, and yeast in a bowl.
  2. Set the flour in a bowl and make a well in the center.
  3. Add the yeast mixture, egg yolk, and butter into the flour.
  4. Knead the dough until it comes into a smooth ball.
  5. Chill the dough overnight.
  6. Sautee garlic and onions in a pan.
  7. Add the bell pepper and jalapenos. Sautee for 1-2 minutes.
  8. Add the beef and saute until brown.
  9. Season with salt and pepper.
  10. Mix in the egg, creme fraiche, tomato paste, and parsley.
  11. Roll out the dough and cut into 4-6 inch circles with a pastry cutter.
  12. Spoon the filling into the center of your dough.
  13. Fold the filled dough close and seal by crimping or by pressing on the edges with a fork.
  14. Pre-heat the oven to 200C.
  15. Arrange the empanadas on a baking sheet.
  16. Brush the empanadas with egg wash.
  17. Bake for 15-20 minutes.
