Pork Carnitas Recipe

<p>My favorite memories when I grow up is sharing the love of cooking with my mother&period;  She loves to cook and sometimes throw parties for a small group of friends&period;  As a kid&comma; there is always a feeling of excitement when she is planning for weekend parties&period;  I know I could be her helping hands&period;  The parties always take place in our garden and it goes on for hours&period;  Foods from our kitchen served – appetizer&comma; I will try to cook this <strong>Pork Carnitas Recipe<&sol;strong>&comma; a Mexican dish originated in the Mexican state of Michoacan&period;  It is made by simmering pork in oil until the meat is crispy golden brown outside and tender&comma; juicy inside&period; It is also done in broth or stock&period;  In making carnitas at home I need to use the right cut of meat for braising&comma; one with streaks of fat to keep the meat moist&period;  The best part is pork shoulder&period;  It is cooked in low and slow cooking and if it is done right&comma; Combine all the ingredients in a large Dutch oven&period; Bring the mixture to a simmer over medium-high heat&comma; uncovered&period; Once it simmers&comma; cover pot and transfer it to the oven&period; Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan&period; Remove and discard everything from the pot except for the cooking liquid&period; Place the pot over high heat on the stove and boil until it thickens and syrupy&comma; use two forks to pull each cube of pork into three equal sized pieces&period; Once the liquid has reduced&comma; gently fold in the pieces of pork into the pot&period; Try not to break up the pork any further&period; Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp about 5 to 8 minutes&period; Using a wide metal spatula&comma;
