BAÑO MARIA
This is a method of cooking that involves placing one pan of ingredients inside another that contains water. This second one is directly exposed to the source of heat.
BIND
Give consistency to a particular sauce or juice by adding an egg yolk, cream, flour, etc.
BLEND
Turn something into a liquid with a blender.
CURDLE
To thicken the parts of a liquid until it becomes solid.
DE-FOAM
Remove foam.
INCORPORATE
A careful mixing of ingredients without the use of a batter.
INFUSION
The act of extracting solvable substances by means of hot water.
MARINADE
The process of adding a prepared liquid to moisten over a period of time meat, poultry, fish or fruit in order to increase flavor or to create a softening effect.
PRE-HEAT
Begin the heating process in advance.
ROLL
Flatten and roll with the use of a rolling pin.
SLICE
To cut into thin slices.
SWEET CREAM
This is not a cream to which is added sugar; rather it is a type of cream which may be purchase at a food market.
